Provided by Culinary Crafts, a renowned Utah catering company, balsamic chicken skewers are the perfect twist on traditional chicken, which (let’s face it) can get a tad boring! A fabulous fusion of Asian and Italian flavors, the skewers are tasty enough for a Super Bowl party yet elegantly appropriate for a wedding luncheon. Bon Appétit!
1 lb chicken thighs cut into 1 inch pieces
1 cup soy sauce
Glaze:
1 cup mango chutney
2 sliced scallions
¼ cup balsamic vinegar
1 tablespoon grated fresh ginger (or ginger powder).
1 tablespoon chopped cilantro
• Marinate chicken pieces in soy sauce for 4 hours (up to 24 hours)
• Thread chicken pieces on skewers
• Roast in oven at 400º for 15 minutes
• Remove from oven and brush balsamic chutney glaze over chicken
• Roast for 5 more minutes
• Makes about 16 skewers
